  • 8 large eggs
  • 2 cups milk (whole or 2%)
  • 1/2 cup heavy whipping cream
  • 1/2 cup sugar
  • 1/4 cup light brown sugar
  • 67 medium ripe bananas, chopped
  • For Streusel: 3/4 cup all-purpose flour
  • 3/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup salted butter

Instructions

  1. Grease a 9×13 inch casserole dish.
  2. In a large bowl, combine bread chunks and set aside.
  3. In another bowl, whisk together eggs, milk, cream, sugars, vanilla extract, and cinnamon until well mixed.
  4. Pour the egg mixture over the bread and gently fold in chopped bananas until coated.
  5. Transfer to the greased casserole dish and cover tightly; refrigerate overnight.
  6. Preheat oven to 350°F (176°C) when ready to bake.
  7. Bake for 35-40 minutes until set.
  8. Prepare streusel by mixing flour, brown sugar, and cinnamon; incorporate butter until crumbly.
