  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup grape or strawberry jelly (or preferred flavor)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract; mix until well combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually incorporate dry ingredients into the wet mixture until a smooth dough forms.
  6. Scoop about 2 tablespoons of dough, flatten into discs and place half on the prepared baking sheet.
  7. Add around 1 teaspoon of jelly in the center of each disc.
  8. Top with another disc of dough and press edges to seal securely.
  9. Bake for about 12-15 minutes or until edges are golden brown.
  10. Cool on the baking sheet for about 5 minutes before transferring to a wire rack.
