  • 1 sheet puff pastry (thawed)
  • 1 (8-ounce) container dairy-free cream cheese
  • 12 tablespoons light agave nectar (or sugar/maple syrup)
  • 1 1/2 teaspoons pure vanilla extract
  • 2 cups peaches (sliced)
  • 1/2 cup fresh blueberries

Instructions

  1. Thaw puff pastry at room temperature for 30–40 minutes. Soften cream cheese for about 30 minutes.
  2. Preheat oven to 400ºF and line a baking sheet with parchment paper.
  3. Beat softened cream cheese with sweetener and vanilla until smooth.
  4. Roll out puff pastry into a rectangle (13”x9”), trace a border, prick the center, brush border with melted vegan butter and sprinkle sugar.
  5. Spoon cream cheese mixture onto the pastry center, layer sliced peaches on top, then dot with blueberries.
  6. Bake for 25–30 minutes until golden brown.
