  • 1 can (8 oz) water chestnuts, drained and diced
  • 3 oz shiitake mushrooms, diced
  • 3 scallions, thinly sliced
  • 1 head of romaine lettuce, leaves washed
  • 1 tbsp sesame oil
  • 1/4 cup hoisin sauce
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp regular soy sauce
  • 1 tbsp rice vinegar
  • 1/2 tbsp sesame oil
  • 2 tsp lightly packed fresh grated ginger
  • 3 garlic cloves, minced
  • 1 shallot, diced

Instructions

  1. In a small bowl, whisk together hoisin sauce, low-sodium soy sauce, regular soy sauce, rice vinegar, and sesame oil.
  2. Heat sesame oil in a large skillet over medium-high heat. Add ground chicken and cook until browned.
  3. Stir in the water chestnuts and shiitake mushrooms. Mix well.
  4. Pour the prepared sauce over the chicken mixture and stir until evenly coated. Cook for a few minutes to meld flavors.
