  • 2 medium flour tortillas
  • 1/2 lb thinly sliced beef (ribeye or top round)
  • 1/2 medium onion (chopped)
  • 1/2 red pepper (diced)
  • 1/2 green pepper (diced)
  • 6 oz mushrooms (diced)
  • 3 slices provolone cheese
  • 1 Tbsp light olive oil
  • 1 garlic clove (minced)
  • Sea salt and black pepper to taste

Instructions

  1. Heat 2 teaspoons of olive oil in a skillet over medium heat. Add the beef, season with salt and pepper, and cook until browned. Remove from skillet.
  2. In the same skillet, sauté chopped onion, peppers, and mushrooms until tender. Add minced garlic and mix well with the cooked beef.
  3. Spread mayonnaise on one side of each tortilla if desired. Fill each tortilla with the beef mixture and top with provolone cheese. Fold over.
  4. Heat remaining olive oil in the skillet over medium heat and cook each quesadilla until golden brown and cheese is melted, flipping once.
  5. Slice into wedges and serve warm.
