  • 2 lbs Yukon gold potatoes
  • 3 cloves garlic
  • 2 tsp smoked paprika
  • 2 tsp cayenne pepper
  • Salt to taste
  • 12 flour tortillas
  • Oil for frying

Instructions

  1. Parboil the quartered Yukon gold potatoes in salted water until fork-tender (10-15 minutes). Drain and transfer to a large bowl.
  2. Mash the potatoes until smooth using a potato masher or ricer.
  3. Mix in minced garlic, smoked paprika, cayenne pepper, and salt until well combined.
  4. Fill each tortilla with about 1/2 cup of the potato mixture, roll tightly, and place seam-side down.
  5. Heat oil in a fry pan over medium heat. Fry flautas seam-side down for 3-5 minutes on each side until golden brown.
  6. Drain on paper towels and serve hot with optional toppings.
