Ingredients
- 2 lbs Yukon gold potatoes
- 3 cloves garlic
- 2 tsp smoked paprika
- 2 tsp cayenne pepper
- Salt to taste
- 12 flour tortillas
- Oil for frying
Instructions
- Parboil the quartered Yukon gold potatoes in salted water until fork-tender (10-15 minutes). Drain and transfer to a large bowl.
- Mash the potatoes until smooth using a potato masher or ricer.
- Mix in minced garlic, smoked paprika, cayenne pepper, and salt until well combined.
- Fill each tortilla with about 1/2 cup of the potato mixture, roll tightly, and place seam-side down.
- Heat oil in a fry pan over medium heat. Fry flautas seam-side down for 3-5 minutes on each side until golden brown.
- Drain on paper towels and serve hot with optional toppings.
