  • 1 ¼ cup oat flour
  • 1 cup pumpkin puree
  • ¾ cup Greek yogurt
  • 2 large eggs
  • ½ cup vanilla flavored protein powder
  • ½ tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ cup dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a mixing bowl, combine oat flour, pumpkin puree, Greek yogurt, eggs, protein powder, spices, baking powder, and baking soda. Mix until well combined.
  3. Fold in half of the chocolate chips and pour batter into the prepared loaf pan; sprinkle remaining chips on top.
  4. Bake for 35-45 minutes or until a toothpick inserted comes out clean.
