- 1.3 lbs ground turkey
- 6 oz chicken maple sausage
- 1 sweet onion
- 3 cloves garlic
- 1 yellow bell pepper
- 1 orange bell pepper
- 1 can cannellini beans
- 1 can red kidney beans
- 1 can pumpkin purée
- 1 can diced tomatoes
- Pumpkin beer and chicken broth for flavoring
Instructions
- Prepare the meats by slicing sausages or removing casings. Set aside.
- In a large pot, heat olive oil and sauté garlic and onion until translucent. Add diced bell peppers and sauté for another 5 minutes.
- Add remaining olive oil to the pot, brown the ground turkey and sausage, seasoning with salt and pepper.
- Stir in the sautéed vegetables, diced tomatoes, pumpkin purée, beans, spices, pumpkin beer, and chicken broth.
- Let the mixture simmer on low heat for 1.5 to 2 hours, stirring occasionally.
