  • 3/4 cup semi-sweet chocolate chips
  • 1/2 cup vegan butter (for streusel)
  • 3/4 cup all purpose flour (for streusel)
  • 1/2 cup brown sugar (for streusel)
  • 2 tbsp granulated sugar (for streusel)
  • 1 tsp cinnamon (for streusel)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a greased 9×5 loaf pan with parchment paper.
  2. Mix softened vegan butter, flour, sugars, and cinnamon in a bowl to create streusel; chill.
  3. In a large bowl, combine pumpkin purée, oil, brown sugar, and maple syrup until well blended.
  4. Sift in flour, spices, baking powder, baking soda, and salt; gently fold in chocolate chips.
  5. Pour batter into the pan, add chilled streusel on top and bake for 55-60 minutes until a toothpick comes out clean.
  6. Cool in the pan for 15 minutes before transferring to a wire rack.
