  • ¼ tsp ground cloves
  • ⅛ tsp ground black pepper
  • 150 g unsalted butter
  • 80 g brown sugar
  • 160 g cream cheese
  • 220 g icing sugar
  • orange food color
  • pumpkin seeds (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix white and brown sugars, then add eggs and vanilla extract. Beat until fluffy.
  3. Gradually mix in vegetable oil and pumpkin puree until smooth.
  4. In another bowl, whisk together flour, baking powder, baking soda, and spices.
  5. Combine dry ingredients into the wet mixture until just incorporated.
  6. Pour batter into a greased 9×13-inch baking pan and bake for about 60 minutes or until a toothpick comes out clean.
  7. For frosting, beat butter and brown sugar until creamy; add cream cheese and icing sugar until smooth.
  8. Once the cake cools completely, frost it, garnish with pumpkin seeds if desired, slice, and serve.
