- 95 grams active sourdough starter
- 100 grams pumpkin puree
- 530 grams bread flour
- 2 teaspoons fine sea salt
- 1 tablespoon ground cinnamon
- 1/2 tablespoon pumpkin spice
- 1/4 cup sugar
Instructions
- In a mixing bowl, combine inactive sourdough starter and lukewarm water. Stir well.
- Add the active sourdough starter and mix until combined.
- In another bowl, whisk together all-purpose flour, bread flour, salt, cinnamon, pumpkin spice, and sugar.
- Gradually add dry ingredients to wet mixture while stirring gently.
- Fold in pumpkin puree until well mixed.
- Knead dough on a floured surface for about 10 minutes until smooth.
- Place in an oiled bowl, cover with a damp cloth, and let rise in a warm place for about 4 hours or until doubled in size.
