Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix melted butter, pumpkin puree, sugar, egg, and vanilla until smooth.
  3. Add flour, pumpkin pie spice, baking powder, and salt; mix until combined.
  4. Chill the dough in the refrigerator for 25 minutes.
  5. Roll into balls (1.5–2 tbsp each) and place on a parchment-lined baking sheet.
  6. Bake for about 18 minutes or until lightly golden.
  7. For frosting: Beat cream cheese and butter until smooth; gradually add powdered sugar and vanilla.
  8. Cool cookies completely before frosting.
