  • 15 oz can pure pumpkin
  • 2 Tbsp flour
  • 2 Tbsp brown sugar (for streusel)
  • 1 tsp granulated sugar (for streusel)
  • 1/4 tsp cinnamon (for streusel)
  • 1.5 Tbsp cold butter (for streusel)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a muffin pan with cupcake liners.
  2. In a large mixing bowl, combine the carrot cake mix and pure pumpkin until smooth. Stir in the flour gently.
  3. In another bowl, mix brown sugar, granulated sugar, cinnamon, and cold butter until crumbly.
  4. Spoon batter into muffin liners until two-thirds full and top with streusel mixture.
  5. Bake for 20 minutes or until a toothpick comes out clean.
