Ingredients

  • 4 ½ cups cooked jasmine rice (cold)
  • ½ lb skinless boneless chicken thighs (thinly sliced)
  • 1.5 cups frozen peas and carrots
  • 3 large eggs (beaten)
  • 3 garlic cloves (minced)
  • 4 teaspoons vegetable oil
  • 1 teaspoon regular soy sauce
  • 1 teaspoon Shaoxing Cooking Wine
  • 1 teaspoon cornstarch
  • 2 tablespoons regular soy sauce
  • ½ tablespoon dark soy sauce
  • 2 teaspoons sesame oil
  • 1 teaspoon chicken bouillon powder
  • ⅛ teaspoon white pepper

Instructions

  1. Marinate sliced chicken thighs in soy sauce and Shaoxing wine for 5–10 minutes.
  2. Combine sauce ingredients in a small bowl and set aside.
  3. Heat 1 teaspoon of vegetable oil in a large pan over medium-high heat. Cook marinated chicken until fully cooked; remove from the pan.
  4. In the same pan, add another teaspoon of oil, sauté garlic and shallots until fragrant, then add frozen peas and carrots.
  5. Push veggies to one side; scramble beaten eggs on the empty side until cooked through, then mix everything together.
  6. Add cooked rice and chicken back into the pan, toss to combine.
  7. Pour sauce around rice; stir-fry for an additional minute until well coated.
