Instructions
- Rinse soaked basmati rice until water runs clear.
- In a heavy-bottomed pot, heat ghee and sauté half the whole spices until fragrant.
- Add sliced onions; cook until golden brown.
- Stir in cubed potatoes, cauliflower, carrots, and green beans; cook for about 5 minutes.
- Add crushed ginger, garlic, and chilies; sauté for another minute.
- Mix in yogurt and other spices before layering the soaked rice on top.
- Pour water over the mixture, cover tightly, and cook on low heat for about 30 minutes until rice is tender.
