- 1 1/2 cups Arborio rice
- 12 oz cremini or button mushrooms, sliced
- 1 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth, warmed
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- 3 tbsp unsalted butter (divided)
- Olive oil
- Salt and pepper to taste
- Fresh parsley (optional)
Instructions
- Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat. Sauté mushrooms until golden (6-8 minutes), then remove from skillet.
- In the same skillet, cook chopped onion until translucent (about 3 minutes). Add minced garlic and sauté for another minute.
- Stir in Arborio rice and cook until edges are translucent (about 2 minutes).
- Pour in white wine and stir continuously until mostly absorbed.
- Gradually add warm vegetable broth, one ladle at a time, stirring frequently until absorbed before adding more. Cook until rice is creamy and al dente (18-20 minutes).
- Stir in sautéed mushrooms, remaining butter, Parmesan cheese, salt, and pepper. Cook for an additional 2 minutes.
- Serve immediately, garnished with extra Parmesan cheese and parsley if desired.
