Ingredients
- 1 whole chicken (4–5 pounds)
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- Zest and juice of 2 large oranges
- 1 tablespoon honey
- 1 tablespoon soy sauce
- Salt and pepper to taste
- 1 small onion, quartered
- 1 cup chicken broth
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, mix orange zest and juice, olive oil, garlic, thyme, rosemary, honey, soy sauce, salt, and pepper.
- Rinse and pat dry the chicken. Place it in a roasting pan breast-side up.
- Loosen the skin from the breast meat and rub half of the marinade under the skin and over the chicken.
- Stuff the cavity with quartered onion and remaining marinade.
- Pour chicken broth into the pan and roast for about 75 minutes or until internal temperature reaches 165°F (75°C), basting occasionally.
- Let rest for 10 minutes before carving to ensure juiciness.
