Ingredients
- 8 fresh pineapple rings
- 1 cup dark rum
- 1 cup coconut rum
- 1 ½ cups all-purpose flour
- 10 oz sweetened coconut flakes
- 2 large eggs
- ½ cup coconut milk
- Vegetable oil (for frying)
- 4 oz cream cheese (softened)
- ½ cup powdered sugar
Instructions
- Soak the pineapple rings in dark and coconut rum for at least one hour. Drain and pat dry.
- Set up three shallow bowls: one with flour, another with sweetened coconut flakes, and the third with whisked eggs and coconut milk.
- Coat each drained pineapple ring first in flour, then egg mixture, and finally press into coconut flakes.
- Heat vegetable oil in a deep pot to 350°F (175°C). Fry coated pineapple rings for about one minute on each side until golden brown. Drain on paper towels.
- For the dipping sauce, blend softened cream cheese with powdered sugar and reserved rum until smooth.
