- 2 cups (340g; 12 ounces) whole unsalted almonds
- 1 cup (230g; 8 ounces) unsalted butter, cubed
- 1/2 cup (120ml; 4 ounces) warm water
- 1 cup (199g; 7 ounces) granulated sugar
- 1 teaspoon salt
- 1 teaspoon light corn syrup
- 8 ounces (224g) dark chocolate, finely chopped
- coarse sea salt or flaky sea salt, for sprinkling on top
Instructions
- Preheat the oven to 300°F (149°C) and line a baking sheet with parchment paper.
- Spread whole almonds on the sheet and toast for 15 minutes, then chop half finely.
- Line a jelly roll pan with parchment paper.
- In a heavy-duty saucepan over medium heat, melt butter, then add water, sugar, salt, and corn syrup until dissolved.
- Bring mixture to boil without stirring; add toasted almonds once boiling.
- Cook until reaching 290°F (143°C), pour into the prepared pan, and smooth into an even layer.
- Sprinkle half of the chopped chocolate on top; let melt before spreading evenly.
- Top with remaining chopped almonds and sea salt; refrigerate until fully set.
