  • 4 large egg yolks
  • 2 1/2 cups heavy whipping cream
  • 2/3 cup light brown sugar
  • 1/3 cup cornstarch
  • 1/2 teaspoon salt
  • 1/2 cup honey
  • 2 teaspoons vanilla extract
  • Flaky sea salt for topping

Instructions

  1. Preheat the oven to 375°F (190°C). Prepare the pie crust in an 8-inch or 9-inch deep dish pan and chill.
  2. In a medium saucepan, combine heavy cream, brown sugar, cornstarch, and salt. Heat over medium heat until boiling while stirring constantly.
  3. Remove from heat and temper the egg yolks by gradually adding hot cream to them while whisking.
  4. Pour the tempered yolks back into the saucepan and stir in honey and vanilla extract until combined.
  5. Pour the mixture into the chilled crust and bake for 40-45 minutes until slightly jiggly.
  6. Cool at room temperature then refrigerate until fully chilled.
  7. Before serving, sprinkle with flaky sea salt.
