Ingredients
- 1 pound Italian sausage (mild or hot)
- 5 tablespoons unsalted butter
- 1 tablespoon olive oil
- 2–1/4 cups mirepoix (diced carrots, celery, and onion)
- 1 teaspoon minced garlic
- 4 cups chopped baby gold potatoes
- 1 teaspoon dried parsley
- 1 teaspoon dried basil
- 4 cups chicken stock
- 6 tablespoons flour
- 3 cups milk (1%, 2%, or whole)
- 1/2 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups freshly shredded extra-sharp Cheddar cheese
- 1/4 cup sour cream
- Hearty buttered bread (for serving, optional)
Instructions
- In a large pot over medium-high heat, brown the Italian sausage until fully cooked. Transfer to a plate lined with paper towels.
- In the same pot, melt one tablespoon of butter and sauté the mirepoix for about 5 minutes. Add minced garlic and cook for an additional 30 seconds.
- Stir in the chopped baby potatoes, dried herbs, salt, and pepper. Pour in the chicken stock and bring to a boil, then reduce heat and simmer until potatoes are fork-tender (15-20 minutes).
- Meanwhile, in a separate pot, melt four tablespoons of butter and whisk in flour for one minute before gradually adding milk to create a smooth mixture. Stir in heavy cream.
- Combine the cream mixture into the soup base before stirring in shredded cheese until melted. Return the cooked sausage to the pot and adjust seasoning as needed.
- Serve warm with crusty bread on the side.
