Ingredients
- 5 Tbsp butter (divided)
- 1 32 oz package frozen whole kernel corn (thawed)
- 1 1/2 cups half and half
- 3 large eggs
- 2 Tbsp granulated sugar
- 1/2 tsp salt
- 1/8 tsp ground nutmeg
- 1 1/2 cups sharp white cheddar or pepper-jack cheese (divided)
- 1 sleeve round butter crackers (crushed and divided)
Instructions
- Preheat the oven to 325°F. Grease a 13×9-inch baking dish with 1 Tbsp butter.
- In a medium bowl, whisk together half and half, eggs, sugar, salt, and nutmeg.
- In a large bowl, combine thawed corn, half and half mixture, 3/4 cup cheese, and 1/2 cup crushed crackers. Stir well.
- Transfer the mixture into the prepared baking dish and bake for about 30 minutes.
- While it bakes, melt the remaining butter and mix with remaining cracker crumbs.
- After initial baking, sprinkle reserved cheese and buttered cracker crumbs on top.
- Return to the oven for another 20-30 minutes until golden brown.
- Let sit for about 5 minutes before serving.
