Description

  • 5 Tbsp butter (divided)
  • 1 32 oz package frozen whole kernel corn (thawed)
  • 1 1/2 cups half and half
  • 3 large eggs
  • 2 Tbsp granulated sugar
  • 1/2 tsp salt
  • 1/8 tsp ground nutmeg
  • 1 1/2 cups sharp white cheddar or pepper-jack cheese (divided)
  • 1 sleeve round butter crackers (crushed and divided)

Instructions

  1. Preheat the oven to 325°F. Grease a 13×9-inch baking dish with 1 Tbsp butter.
  2. In a medium bowl, whisk together half and half, eggs, sugar, salt, and nutmeg.
  3. In a large bowl, combine thawed corn, half and half mixture, 3/4 cup cheese, and 1/2 cup crushed crackers. Stir well.
  4. Transfer the mixture into the prepared baking dish and bake for about 30 minutes.
  5. While it bakes, melt the remaining butter and mix with remaining cracker crumbs.
  6. After initial baking, sprinkle reserved cheese and buttered cracker crumbs on top.
  7. Return to the oven for another 20-30 minutes until golden brown.
  8. Let sit for about 5 minutes before serving.
