  • 4 tablespoons butter
  • ¼ cup sour cream
  • ¼ to ½ cup milk
  • Salt and pepper to taste
  • 1 pound ground beef
  • 1 small onion
  • 2 cloves garlic
  • 2 cups frozen peas, carrots, and corn medley
  • 2 tablespoons flour
  • ½ cup beef broth
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon rosemary
  • ½ teaspoon thyme
  • 1 bay leaf

Instructions

  1. Preheat the oven to 350°F.
  2. Boil peeled and chunked potatoes until fork-tender; drain and mash with butter, sour cream, milk, salt, and pepper.
  3. In a skillet, brown ground beef with diced onions and minced garlic; drain excess grease.
  4. Stir in mixed vegetables and cook for about 5 minutes.
  5. Add flour, broth, tomato paste, Worcestershire sauce, and seasonings; simmer for 10 minutes.
  6. Spread meat mixture into a baking dish; top with mashed potatoes.
  7. Bake for approximately 30 minutes until golden brown.
