  • 200 g fresh beef, thinly sliced
  • Chinese cabbage (or leafy greens of choice)
  • 1 tbsp garlic, minced
  • 1 white onion, sliced
  • 1 tbsp soy sauce
  • 1 tsp oyster sauce
  • 1 tsp sesame oil
  • 3 tbsp dark soy sauce
  • 2 tsp fresh ground black pepper
  • 1 clove garlic, minced
  • 1 tsp corn starch or potato starch + water (for slurry)
  • 1 tsp Chinese white rice vinegar
  • 3 tbsp water
  • 1/2 tsp potato starch
  • Salt to taste
  • Sugar to taste

Instructions

  1. Marinate the beef: In a mixing bowl, combine minced garlic, sesame oil, soy sauce, oyster sauce, vinegar, and cornstarch slurry. Coat the beef and let it marinate for about 10 minutes.
  2. Cook the udon: Boil noodles in water for 1-2 minutes until slightly tender. Drain and set aside.
  3. Prepare the sauce: Mix remaining marinade ingredients with black pepper and water in a bowl.
  4. Stir-fry: Heat oil in a wok; sauté garlic and onions until soft. Add marinated beef; stir-fry for 2-3 minutes until browned. Pour in the sauce mixture and cook until thickened.
  5. Combine: Add cooked udon noodles and cabbage; toss together gently to coat with sauce.
