  • 225 g rice vermicelli noodles
  • 12 shrimp, peeled
  • 1 cup Chinese BBQ pork (char siu), sliced
  • 4 cloves garlic, minced
  • 2 cm ginger, grated
  • 1/2 sweet bell pepper, sliced
  • 1/2 white onion, sliced
  • 1 carrot, julienned
  • 1 cup snow peas, sliced
  • 3 tablespoons Madras curry powder
  • 3 tablespoons soy sauce
  • 3 tablespoons fish sauce
  • 1 tablespoon sesame oil

Instructions

  1. Soak the rice vermicelli noodles in hot water for about 2 minutes until soft. Drain and cut if necessary.
  2. Prepare vegetables by slicing and grating as described.
  3. In a frying pan, create egg ribbons by cooking beaten eggs over medium heat until firm; slice into strips.
  4. Combine all sauce ingredients in a bowl and set aside.
  5. Heat oil in a wok or large frying pan over medium heat. Stir-fry ginger and garlic until fragrant; add shrimp for one minute before removing.
  6. Stir-fry BBQ pork and carrots until tender; add snow peas, onion, and bell pepper next.
  7. Add soaked noodles along with the prepared sauce; stir well and heat through.
  8. Finally, mix in egg ribbons and chopped green onions just before serving.
