- 225 g rice vermicelli noodles
- 12 shrimp, peeled
- 1 cup Chinese BBQ pork (char siu), sliced
- 4 cloves garlic, minced
- 2 cm ginger, grated
- 1/2 sweet bell pepper, sliced
- 1/2 white onion, sliced
- 1 carrot, julienned
- 1 cup snow peas, sliced
- 3 tablespoons Madras curry powder
- 3 tablespoons soy sauce
- 3 tablespoons fish sauce
- 1 tablespoon sesame oil
Instructions
- Soak the rice vermicelli noodles in hot water for about 2 minutes until soft. Drain and cut if necessary.
- Prepare vegetables by slicing and grating as described.
- In a frying pan, create egg ribbons by cooking beaten eggs over medium heat until firm; slice into strips.
- Combine all sauce ingredients in a bowl and set aside.
- Heat oil in a wok or large frying pan over medium heat. Stir-fry ginger and garlic until fragrant; add shrimp for one minute before removing.
- Stir-fry BBQ pork and carrots until tender; add snow peas, onion, and bell pepper next.
- Add soaked noodles along with the prepared sauce; stir well and heat through.
- Finally, mix in egg ribbons and chopped green onions just before serving.
