  • 3 boneless skinless chicken breasts (5 to 6 oz each)
  • ½ cup all-purpose flour
  • 12 oz mushrooms (thickly sliced)
  • ½ cup dry white wine
  • 1 ½ cups low-sodium chicken broth
  • ½ cup heavy cream
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter (divided)
  • Fresh thyme
  • Garlic
  • Shallots

Instructions

  1. Pat chicken dry and cut each breast in half horizontally. Dredge in flour mixed with salt, pepper, and garlic powder.
  2. Heat olive oil and 2 tablespoons butter in a large skillet over medium heat. Cook chicken until browned on both sides; remove and keep warm.
  3. In the same skillet, add remaining butter and sauté mushrooms until browned. Add shallots and garlic; cook until fragrant.
  4. Deglaze with wine, scraping up any bits from the pan. Stir in thyme, broth, mustard, and cream; bring to a boil.
  5. Add cornstarch mixed with water to thicken the sauce, then return chicken to skillet to heat through.
