  • 1 onion (cut into ¾ inch pieces)
  • 1 bell pepper (any color, cut into ¾-inch pieces)
  • 4 fully cooked sausages (sliced into circles ¼-inch thick)
  • 2 ½ tbsp olive or avocado oil
  • 1 tsp garlic (minced)
  • ¼ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp onion powder
  • ¼ tsp pepper
  • ½ tsp salt
  • Fresh basil (for garnish, optional)

Instructions

  1. Heat 1 tablespoon of olive oil in a non-stick skillet over medium-high heat.
  2. Add sliced sausage and sauté until browned (about 3-4 minutes). Remove from skillet.
  3. Lower heat to medium; add remaining oil and vegetables to the skillet.
  4. Sprinkle with seasonings and stir well; cook until vegetables are tender (about 5 minutes).
  5. Return sausage to the skillet with minced garlic; stir and cook for a few more minutes until heated through.
