  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 oz taco seasoning
  • 14.5 oz diced tomatoes with green chilies
  • 15 oz black beans (drained)
  • 15 oz corn (drained)
  • 1 cup salsa
  • 1 cup shredded Mexican cheese blend
  • 6 small tortillas (cut into strips)

Instructions

  1. Brown the ground beef in a skillet over medium heat; drain excess fat.
  2. Sauté onions until softened, then add garlic and cook until fragrant.
  3. Mix in taco seasoning and diced tomatoes; remove from heat.
  4. In the slow cooker, layer salsa, tortilla strips, half the beef mixture, black beans, and corn. Repeat layers and top with remaining tortilla strips and salsa.
  5. Cook on low for 4-5 hours or high for 2-3 hours.
  6. Add cheese during the last 15 minutes to melt before serving.
