  • 12 full-size graham crackers
  • 2 tablespoons granulated sugar
  • 6 tablespoons unsalted butter (melted)
  • ½ cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup bittersweet chocolate chips
  • 2 heaping cups mini marshmallows (about 3.5 ounces)

Instructions

  1. Preheat the oven to 350°F and prepare an 8×8 inch baking pan with parchment paper.
  2. In a food processor, blend graham crackers and sugar until fine; mix in melted butter. Press into the prepared pan.
  3. Bake the crust for 15-20 minutes until golden; set aside.
  4. In a bowl, whisk together oil, sugar, eggs, and vanilla. Stir in cocoa powder, flour, baking powder, and salt until smooth.
  5. Pour brownie batter over the cooled crust; spread evenly and bake for 30-40 minutes until set.
