  • 2 tablespoons milk
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon extract
  • 1/2 teaspoon vanilla extract
  • A small amount of yellow food coloring (optional)
  • 3 tablespoons granulated sugar (for lemon sugar coating)
  • 3 tablespoons lemon zest (from ~4 lemons)
  • 1 cup powdered sugar (for icing)
  • 2 tablespoons fresh lemon juice (for icing)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a cookie sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cream of tartar, and salt; set aside.
  3. In a stand mixer, beat margarine until creamy. Gradually add sugar and mix well. Incorporate eggs one at a time, then add milk, lemon juice, lemon extract, vanilla extract, and optional food coloring.
  4. Gradually combine dry ingredients with the wet mixture until just combined.
  5. Roll dough into 2-inch balls and coat in lemon-sugar mixture before placing on the cookie sheet.
  6. Bake for 13–14 minutes; let cool on wire racks before drizzling with icing.
