Ingredients

Scale
  • ¼ cup warmed milk (110℉)
  • 1 ½ teaspoons instant yeast
  • 2 cups + 1 tablespoon all-purpose flour
  • 200 grams sourdough discard (unfed)
  • 1 egg (lightly beaten)
  • 10 tablespoons unsalted butter (melted and softened)
  • Fresh parsley or rosemary (chopped)
  • Garlic powder
  • Kosher salt

Instructions

  1. In the stand mixer bowl, combine warmed milk, yeast, and sugar. Add flour, sourdough discard, beaten egg, herbs, salt, garlic powder, and melted butter. Mix on low speed until shaggy dough forms.
  2. Knead on a floured surface for about 3–4 minutes until smooth and slightly tacky.
  3. Place in a greased bowl covered with plastic wrap to rise for 60–90 minutes until doubled in size.
  4. Prepare the topping by mixing softened butter with herbs, garlic powder, and salt.
  5. Divide risen dough into 12 pieces; shape each into circles, fill with topping mixture, fold like tacos, and place seam-side down in a greased loaf pan.
  6. Allow to rise again for 30–45 minutes before baking in a preheated oven at 350℉ for about 30–40 minutes until golden brown.
