  • 1 lb boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 small onion, finely diced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 cloves garlic, minced

Instructions

  1. Prepare the Cajun seasoning by mixing all spices in a bowl.
  2. Cook the penne pasta according to package instructions; drain and set aside.
  3. In a skillet over medium-high heat, combine olive oil and butter. Season and cook chicken until browned; remove from skillet.
  4. Sauté onions and bell peppers in the same skillet for 3-4 minutes.
  5. Add garlic and remaining Cajun seasoning; cook for another minute.
  6. Stir in heavy cream and simmer until slightly thickened.
  7. Combine cooked chicken and pasta with the sauce; mix well.
  8. Garnish with parsley and extra Parmesan cheese before serving.
