- 2 cups diced onion
- 1 cup diced carrot
- 1 cup diced celery
- 1 tablespoon minced garlic
- 1 tablespoon Italian seasoning
- 1–1/2 teaspoons ground cumin
- 1 teaspoon dried thyme
- 1/8 teaspoon red pepper flakes
- 1–1/2 cups green split peas
- 1 meaty ham bone (or hocks)
- 8 cups reduced-sodium chicken broth
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrot, celery, salt, and pepper; cook until softened (5–8 minutes).
- Stir in garlic, Italian seasoning, cumin, thyme, and red pepper flakes; cook for another minute.
- Add split peas, ham bone, bay leaves, and chicken broth. Bring to a boil then reduce heat to low. Simmer uncovered for 60–90 minutes until peas are soft.
- Remove the ham bone; shred meat back into the soup while discarding bones/fat.
- For creaminess, blend a portion of the soup then return it to the pot; adjust seasoning if necessary.
