  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp nutmeg
  • 1 cup granulated sugar
  • 3/4 cup canned pumpkin
  • 4 oz cream cheese (softened)
  • 2 large eggs
  • 1/2 cup canola oil

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with muffin liners.
  2. In a large bowl, mix together the dry ingredients: flour, baking soda, cinnamon, cloves, nutmeg, and salt.
  3. In another bowl, whisk together the wet ingredients: sugar, canola oil, canned pumpkin, eggs, and vanilla extract until smooth.
  4. Gradually combine the wet mixture with the dry ingredients until just blended.
  5. For the cream cheese filling, combine softened cream cheese with sugar, milk, flour, and vanilla in a separate bowl until smooth.
  6. Fill each muffin cup halfway with batter, add a spoonful of cream cheese filling on top, then cover with remaining batter.
  7. Bake for about 20 minutes or until a toothpick comes out clean. Allow cooling before serving.
