Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with muffin liners.
- In a large bowl, mix together the dry ingredients: flour, baking soda, cinnamon, cloves, nutmeg, and salt.
- In another bowl, whisk together the wet ingredients: sugar, canola oil, canned pumpkin, eggs, and vanilla extract until smooth.
- Gradually combine the wet mixture with the dry ingredients until just blended.
- For the cream cheese filling, combine softened cream cheese with sugar, milk, flour, and vanilla in a separate bowl until smooth.
- Fill each muffin cup halfway with batter, add a spoonful of cream cheese filling on top, then cover with remaining batter.
- Bake for about 20 minutes or until a toothpick comes out clean. Allow cooling before serving.
