  • 3 cups gluten-free 1-to-1 flour (or all-purpose flour)
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • ½ cup finely diced strawberries
  • pinch sea salt (optional)

Instructions

  1. Prepare the cream cheese filling by mixing softened cream cheese and powdered sugar in a stand mixer until smooth.
  2. Scoop out teaspoon-sized balls of the filling, place them on a parchment-lined baking pan, and freeze while preparing the cookie dough.
  3. In the stand mixer, combine cold butter with granulated and brown sugars, beating until creamy. Add eggs and mix well.
  4. Incorporate flour, baking soda, vanilla extract, and diced strawberries until combined. Chill dough for at least 30 minutes.
  5. Preheat oven to 350°F and line a baking pan with parchment paper.
  6. Form large balls of cookie dough, press an indent in each, fill with cream cheese mixture, and seal completely.
  7. Bake for 11 to 12 minutes or until just set in the middle. Cool before serving.
