  • 1/2 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, finely chopped
  • 1 green bell pepper, finely chopped
  • 2 cans (14.5 oz each) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 cups cooked long grain white rice
  • Fresh Italian parsley, chopped (for garnish)
  • Shredded cheese (optional)

Instructions

  1. In a Dutch oven over medium heat, brown the ground beef; drain excess fat and season with salt and pepper. Set aside.
  2. Sauté onions and bell peppers in olive oil until soft; add garlic and cook for another 30 seconds.
  3. Stir in browned beef along with diced tomatoes, tomato sauce, broth, Worcestershire sauce, and seasonings. Adjust flavors to taste.
  4. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  5. Stir in cooked rice just before serving and garnish with fresh parsley and cheese if desired.
