- 1 yellow bell pepper, chopped

- 2 tablespoons cider vinegar
- 6 tablespoons brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon fresh ginger, grated
- 2 cloves garlic, grated
- 432 g tin pineapple pieces, drained
Instructions
- In a medium bowl, mix cornstarch with salt and pepper. Coat chicken pieces in the mixture.
- Heat vegetable oil in a high-sided skillet over medium-high heat. Fry chicken until golden brown; set aside.
- Sauté onion in the same skillet until softened, then add bell peppers and cook briefly.
- Whisk ketchup, vinegar, brown sugar, soy sauce, ginger, and garlic together in a bowl and pour into the skillet; bring to a simmer.
- Add pineapple pieces and adjust sauce consistency with reserved juice as needed.
