  • 1 cup cooked sweet potatoes (pureed)
  • 2 eggs, room temperature
  • 1 egg yolk, room temperature
  • 2 tablespoons vegetable oil
  • ½ cup butter, melted
  • ¼ teaspoon vanilla extract
  • 1 cup buttermilk

  • 4 tablespoons butter, melted (for glaze)
  • 2 tablespoons light brown sugar, packed (for glaze)
  • 2 tablespoons honey (for glaze)

Instructions

  1. Prepare the sweet potato puree by boiling peeled and cubed sweet potatoes until tender, then mash until smooth.
  2. Preheat your oven to 400 F and grease an 8-inch baking dish.
  3. In one bowl, whisk together yellow cornmeal, flour, baking powder, salt, baking soda, and spices.
  4. In another bowl, mix the sweet potato puree with eggs, melted butter, vegetable oil, vanilla extract, and buttermilk until well combined.
  5. Gradually add the dry ingredients to the wet ingredients and stir gently until just combined.
  6. Pour the batter into the prepared pan and bake for about 40 minutes or until golden brown and a toothpick comes out clean.
