- ½ cup light brown sugar
- ¼ cup granulated sugar
- 2 large eggs (room temperature)
- ½ cup sour cream (room temperature)
- ½ cup chopped pecans
- 1/3 cup light brown sugar (for streusel)

Instructions
- Preheat the oven to 425°F (218°C). Roast sweet potatoes until fork-tender.
- Puree cooled sweet potatoes until smooth.

- In another bowl, whisk together oil, sugars, eggs, sour cream, and sweet potato puree.
- Mix dry ingredients into wet until just combined; let rest for 30 minutes.
