  • 1 pound rotini
  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • 15 ounces canned black beans (drained and rinsed)
  • 8 ounces canned corn (drained)
  • 2 cups halved cherry tomatoes
  • 16 ounces Catalina dressing
  • 9 ounces Nacho Cheese Doritos (crushed)

Instructions

  1. Cook the rotini in boiling water until al dente; drain and rinse with cold water.
  2. In a skillet, brown the ground beef with taco seasoning and a little water until cooked through.
  3. In a large mixing bowl, combine cooked pasta, seasoned beef, black beans, corn, and cherry tomatoes.
  4. Whisk together Catalina dressing and sour cream; pour over salad mixture and stir to combine.
  5. Before serving, fold in crushed Doritos for crunch.
