- 4 boneless, skinless chicken breasts or thighs
- ¼ cup creamy peanut butter
- ¼ cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons honey
- 1 tablespoon sriracha (adjustable)
- ½ cup coconut milk
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
Instructions
- Gather all ingredients and chop the chicken into bite-sized pieces.
- Heat vegetable oil in a skillet over medium heat. Sauté garlic and ginger for about 1 minute until fragrant. Add chicken and cook until browned and cooked through (5-7 minutes). Remove from skillet.
- In the same skillet, combine peanut butter, soy sauce, rice vinegar, honey, sriracha, coconut milk, lime juice, and sesame oil. Stir until smooth and simmer for 3-5 minutes.
- Return the chicken to the skillet; toss to coat evenly with sauce and heat through for an additional 2-3 minutes.
- Serve hot over steamed rice or noodles, garnished with chopped peanuts and fresh cilantro.
