Description

Thai Peanut Chicken is a delightful fusion of savory, creamy, and subtly spicy flavors that transports you straight to the heart of Thai cuisine.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts or thighs
  • ¼ cup creamy peanut butter
  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon sriracha (adjustable)
  • ½ cup coconut milk
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced

Instructions

  1. Gather all ingredients and chop the chicken into bite-sized pieces.
  2. Heat vegetable oil in a skillet over medium heat. Sauté garlic and ginger for about 1 minute until fragrant. Add chicken and cook until browned and cooked through (5-7 minutes). Remove from skillet.
  3. In the same skillet, combine peanut butter, soy sauce, rice vinegar, honey, sriracha, coconut milk, lime juice, and sesame oil. Stir until smooth and simmer for 3-5 minutes.
  4. Return the chicken to the skillet; toss to coat evenly with sauce and heat through for an additional 2-3 minutes.
  5. Serve hot over steamed rice or noodles, garnished with chopped peanuts and fresh cilantro.
