  • 2 medium potatoes, diced

  • 2 cans coconut milk
  • 4 oz red curry paste
  • 1/4 cup + 2 Tbsp peanut butter
  • Juice from 1 lime
  • Olive oil
  • Ground ginger
  • Minced garlic
  • Brown sugar
  • Soy sauce
