  • ⅓ cup natural peanut butter
  • 3 tablespoons olive oil
  • 3 tablespoons rice vinegar (or regular vinegar)
  • 2 tablespoons coconut aminos (or soy sauce)
  • 1 teaspoon sugar substitute (or regular sugar)
  • 1 teaspoon minced garlic
  • ½ teaspoon ginger paste
  • ¼ to ½ teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine shredded cabbage, chopped cucumber, sliced green onions, salted peanuts, and chopped red bell pepper.
  2. In a separate small bowl, whisk together peanut butter, olive oil, rice vinegar, coconut aminos, sugar substitute, garlic, ginger paste, and red pepper flakes until smooth.
