- 2 (5oz) cans of tuna, drained
- 1 medium onion, chopped
- 1/2 stalk celery, chopped
- 1 clove garlic, minced
- 1 tablespoon parsley, chopped
- 3–4 tablespoons mayonnaise
- 3 tablespoons extra virgin olive oil (divided)
- 1/3 cup shredded mozzarella cheese
- Sliced bread
- Softened butter
- Salt and pepper to taste
Instructions
- In a medium bowl, combine drained tuna with onion, celery, garlic, parsley, mayonnaise, olive oil, mozzarella cheese, salt, and pepper. Mix gently.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
- Butter one side of a slice of bread and place it butter-side down in the skillet. Scoop about 2 tablespoons of tuna mixture onto the bread.
- Butter another slice of bread on one side and place it non-buttered side on top of the tuna mixture.
- Grill until both sides are golden brown and the cheese is melted.
