Ingredients
- 4 cube steaks (about 1/3 lb each)
- 1 ½ cups all-purpose flour
- 2 teaspoons fresh ground black pepper, divided
- 2 teaspoons kosher salt or sea salt, divided
- ½ teaspoon smoked paprika
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- 1 ½ cups buttermilk
- 2 teaspoons TABASCO® Sauce
- 2 eggs
- 1 cup vegetable oil
- 4 tablespoons grease
- 4 tablespoons flour
- 2 to 3 cups whole milk
- ½ cup heavy whipping cream
- salt and pepper to taste
Instructions
- In one bowl, whisk together flour, spices, baking soda, and baking powder.
- In another bowl, combine buttermilk, TABASCO® Sauce, and eggs.
- Pat cube steaks dry, season with salt and pepper.
- Dredge steaks: coat in flour mixture, dip in buttermilk mix, then return to flour for a second coating.
- Heat oil in a cast iron skillet over medium-high heat. Fry steaks until golden brown (3-4 minutes each side).
- Drain fried steaks on paper towels; keep warm in an oven set between 225°F and 250°F.
