  • 4 cube steaks (about 1/3 lb each)
  • 1 ½ cups all-purpose flour
  • 2 teaspoons fresh ground black pepper, divided
  • 2 teaspoons kosher salt or sea salt, divided
  • ½ teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 ½ cups buttermilk
  • 2 teaspoons TABASCO® Sauce
  • 2 eggs
  • 1 cup vegetable oil
  • 4 tablespoons grease
  • 4 tablespoons flour
  • 2 to 3 cups whole milk
  • ½ cup heavy whipping cream
  • salt and pepper to taste

Instructions

  1. In one bowl, whisk together flour, spices, baking soda, and baking powder.
  2. In another bowl, combine buttermilk, TABASCO® Sauce, and eggs.
  3. Pat cube steaks dry, season with salt and pepper.
  4. Dredge steaks: coat in flour mixture, dip in buttermilk mix, then return to flour for a second coating.
  5. Heat oil in a cast iron skillet over medium-high heat. Fry steaks until golden brown (3-4 minutes each side).
  6. Drain fried steaks on paper towels; keep warm in an oven set between 225°F and 250°F.
