  • 3 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 4 cups fresh spinach
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1/2 cup chicken or vegetable broth

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic for about 30 seconds. Add shrimp and cook until pink (3–5 minutes).
  3. Stir in cherry tomatoes and cook until softened (about 2 minutes). Add spinach and red pepper flakes (if using) until wilted.
  4. Pour in the broth and bring to simmer. Add cooked pasta along with reserved water as needed to create a sauce. Season with salt and black pepper.
  5. Serve immediately, topped with Parmesan cheese and fresh basil if desired.
