Ingredients
- 1 tbsp olive oil
- 1/2 sweet onion, diced
- 5–7 cloves garlic, minced
- 1 lb ground turkey
- 28 oz canned petite diced tomatoes
- 16 oz canned tomato sauce
- 1/2 cup chicken broth
- 1 large sweet potato, cubed (~12 oz)
- 1 tbsp chili powder
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1 cup frozen corn
Instructions
- Heat olive oil in a large pot over medium heat. Sauté the onion and garlic until fragrant.
- Add ground turkey and cook until no longer pink. Season with salt and pepper.
- Stir in tomatoes, tomato sauce, chicken broth, sweet potatoes, chili powder, smoked paprika, cumin, and sugar. Bring to a boil.
- Reduce heat and simmer for about 15 minutes until sweet potatoes are tender.
- Add frozen corn and increase heat to medium-high until boiling again. Adjust seasoning as needed.
