  • 1 tbsp olive oil
  • 1/2 sweet onion, diced
  • 57 cloves garlic, minced
  • 1 lb ground turkey
  • 28 oz canned petite diced tomatoes
  • 16 oz canned tomato sauce
  • 1/2 cup chicken broth
  • 1 large sweet potato, cubed (~12 oz)
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1 cup frozen corn

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the onion and garlic until fragrant.
  2. Add ground turkey and cook until no longer pink. Season with salt and pepper.
  3. Stir in tomatoes, tomato sauce, chicken broth, sweet potatoes, chili powder, smoked paprika, cumin, and sugar. Bring to a boil.
  4. Reduce heat and simmer for about 15 minutes until sweet potatoes are tender.
  5. Add frozen corn and increase heat to medium-high until boiling again. Adjust seasoning as needed.
