  • 6 large russet potatoes
  • 12 oz bacon
  • 1 cup half-and-half or heavy cream
  • 8 oz sour cream
  • 3 cups shredded sharp cheddar cheese
  • 1 Tbsp vegetable oil
  • 2 tsp kosher salt
  • 1 tsp cracked black pepper
  • 1 1.0 oz packet dry ranch salad dressing mix
  • 1 1/2 tsp garlic salt
  • 1 tsp granulated garlic
  • 1 tsp onion powder
  • 1/2 cup salted butter, melted (plus 3 Tbsp sliced for dotting the top)
  • 1 small bunch green onions (thinly sliced)
  • Snipped chives or additional green onions for garnishing

Instructions

  1. Preheat the oven to 450°F. Scrub and prepare the potatoes with oil, salt, and pepper. Bake for 60–75 minutes until tender.
  2. Cook bacon in a skillet until crispy; crumble and set aside.
  3. Cut baked potatoes in half and mash them in a bowl until chunky.
  4. Mix in sour cream, half-and-half, melted butter, ranch seasoning, garlic salt, onion powder, and black pepper.
  5. Stir in bacon bits and 2 cups of cheese.
  6. Transfer mixture to a greased baking dish; top with remaining cheese and dot with butter.
  7. Bake at 350°F for 35–45 minutes or until golden brown.
