- 1 cup powdered sugar
- 2 cups all-purpose flour
- 1 teaspoon pure vanilla extract
- 6 tablespoons salted butter (for caramel)
- ½ cup light corn syrup
- 1 cup granulated sugar
- 1 cup heavy whipping cream (divided)
- 1¼ cups milk or dark chocolate
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a bowl, cream together the salted butter and powdered sugar until light and fluffy. Gradually add in the flour and vanilla extract, mixing well.
- Press the shortbread mixture evenly into the prepared pan and bake for about 15-20 minutes until lightly golden.
- For the caramel filling, melt salted butter, corn syrup, and granulated sugar in a saucepan over medium heat. Stir until melted, then add half of the heavy whipping cream and continue stirring until slightly thickened. Stir in vanilla extract.
- Pour the caramel over the cooled shortbread base and let it sit at room temperature before refrigerating for about an hour.
- Melt chocolate with remaining heavy whipping cream until smooth; pour over the chilled caramel layer.
- Refrigerate again until set, then slice into squares.
