Description

Ingredients

  • 1 cup salted butter (room temperature)
  • 1 cup powdered sugar
  • 2 cups all-purpose flour
  • 1 teaspoon pure vanilla extract
  • 6 tablespoons salted butter (for caramel)
  • ½ cup light corn syrup
  • 1 cup granulated sugar
  • 1 cup heavy whipping cream (divided)
  • 1¼ cups milk or dark chocolate

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a bowl, cream together the salted butter and powdered sugar until light and fluffy. Gradually add in the flour and vanilla extract, mixing well.
  3. Press the shortbread mixture evenly into the prepared pan and bake for about 15-20 minutes until lightly golden.
  4. For the caramel filling, melt salted butter, corn syrup, and granulated sugar in a saucepan over medium heat. Stir until melted, then add half of the heavy whipping cream and continue stirring until slightly thickened. Stir in vanilla extract.
  5. Pour the caramel over the cooled shortbread base and let it sit at room temperature before refrigerating for about an hour.
  6. Melt chocolate with remaining heavy whipping cream until smooth; pour over the chilled caramel layer.
  7. Refrigerate again until set, then slice into squares.
