  • 340 grams evaporated milk (1 can)
  • 170 grams heavy cream
  • 285 grams corn syrup
  • 475 grams powdered sugar
  • 90 grams vegetable shortening
  • 75 grams corn syrup (additional)
  • 2 grams vanilla extract

Instructions

  1. Line a 9×13 inch baking dish with parchment paper.
  2. In a heavy-bottomed saucepan, melt together unsalted butter, brown sugar, salt, and evaporated milk over medium heat.
  3. Bring to a gentle boil and monitor temperature with a candy thermometer until it reaches approximately 240°F (soft ball stage).
  4. Stir in heavy cream and both types of corn syrup; cook until it returns to 240°F.
  5. Remove from heat and whisk in powdered sugar, vegetable shortening, and vanilla extract until smooth.
  6. Pour the mixture into the prepared dish and let cool completely before cutting into squares.
